Die Cooley Distillery wurde 1987 von John Teeling auf der Cooley-Halbinsel in der Grafschaft Louth gegründet. Für die Herstellung von Grain Whisky wird Wasser aus den Cooley Mountains verwendet. In einem Brennhaus wird mit zwei Kolonnenbrennapparaten Grain Whisky gebrannt, in einem zweiten Brennhaus mit zwei Kupferbrennapparaten und einem zweifachen Destillationsverfahren Malt Whisky. Die Cooley Distillery produziert sowohl getorften als auch ungetorften Malt Whisky.
