Tasting Notes
Speyside [M] 21 Year Old 2005 Signatory Symington’s Choice is an exceptional Speyside single malt Scotch whisky, distilled in 2005 at the undisclosed Macallan Distillery and independently bottled by Signatory Vintage for its prestigious Symington’s Choice collection. Matured for 21 years in a single first-fill Oloroso sherry butt #102 and bottled in September 2026, this highly limited release yielded just 668 individually numbered bottles at a powerful 58.3% ABV.
Released under the discreet Speyside [M] designation, this whisky offers a rare opportunity to experience mature spirit from one of Speyside's most celebrated distilleries through an independent bottling. The combination of more than two decades of maturation and a first-fill Oloroso sherry butt delivers the rich, full-bodied sherry character for which mature Macallan-origin whisky is particularly sought after. The first-fill Oloroso oak brings impressive depth, layering dried fruits, dark chocolate, roasted nuts, orange and warming spice over a foundation of rich malt and mature fruit. At 21 years old and bottled at 58.3% ABV, the whisky retains remarkable concentration, balancing powerful sherry richness with the complexity and polished oak character that comes from extended maturation.
