Tasting Notes
Nose: Enticing layers of dried apricots, demerara sugar, and nutty undertones lead the way, with a hint of Dailuaine’s characteristic savoury depth
Palate: Rich and mouth-coating, unfolding toffee, fig jam, and baking spice, supported by a subtle thread of dark chocolate and gentle oak
Finish: Long, warm, and lingering, leaving sherry-soaked fruit, sweet malt, and a final whisper of wood spice that gradually softens.
Experience Speyside’s meaty undertones and sherry-driven depth with Dailuaine 16 Year Old 2008, part of Signatory’s Cask Strength collection. Drawn from a 1st Fill Oloroso Sherry Butt (#6) and bottled in February 2025 at natural strength, this limited release of 681 bottles highlights Dailuaine’s robust, savory spirit perfectly married with opulent dark fruit and spice from fresh Oloroso oak. Unchill-filtered for maximum flavor and mouthfeel, it stands as a bold testament to the “meatier” side of Speyside.
Why We Think You’ll Love It:
- 16-year age statement strikes the ideal balance of spirited intensity and developed complexity
- 1st Fill Oloroso cask influence adds decadent notes of dried fruit, spice, and caramel to Dailuaine’s uniquely meaty core
- Bottled at cask strength, ensuring an unadulterated, full-bodied Speyside experience
- Limited to 681 bottles—a must-have for collectors and fans of richly sherried single malts
Immerse yourself in this sumptuous Dailuaine—a robust testament to the Speyside style, tempered by meaty nuances, and elevated by the luxurious sweetness of first-fill sherry.

The Distillery
Dailuaine
Dailuaine Distillery, founded in 1851 by William Mackenzie at Carron in Scotland’s Speyside whisky region, gained historical significance in 1889 when Charles C. Doig was commissioned to design a revolutionary pagoda roof for its malt kiln—the first of its kind, now a symbol of traditional malt whisky distilleries worldwide. Although Doig’s original design was destroyed in a 1917 fire, Dailuaine continues to produce distinctive single malt Scotch whisky, offering both a 16 Year Old expression and special releases, alongside an array of independent bottlings that remain popular with whisky enthusiasts seeking a taste of Speyside heritage.
