Cooley Distillery was established on the Cooley Peninsular in County Louth in 1987 by John Teeling. Water from the Cooley Mountains is used to produce grain whisky from two column stills in one still house and malt whisky using two copper stills and a double distillation process in a second still house. Cooley Distillery produces both peated and unpeated malt whisky.
Nose: Smokey peatiness balanced by heather floralness with hints of honey and oak. Palate: Silky smooth with a honey sweet start, followed by more complex aromas of malt and fruit giving way to the intensifying full bodied peat. A well-balanced yet complex taste with vanilla oak notes.
