Tasting Notes

TWB Tasting Notes: Nose: Bold and intense, with rich aromas of molasses, dark chocolate, and charred oak. Notes of dried fruits such as prunes and raisins are layered with hints of vanilla, leather, and warm spices. The high ABV accentuates subtle undertones of burnt sugar and a touch of smokiness. Palate: Full-bodied and robust, offering a powerful blend of flavors including caramel, toffee, and dark chocolate. These are interwoven with dried apricot, roasted nuts, and a pronounced spiciness. The influence of the high alcohol content brings forward additional complexity, with nuances of brown sugar, tropical fruit, and mature oak. Finish: Exceptionally long and warming, with lingering notes of spiced oak, dark chocolate, and a delicate hint of tobacco and leather. The finish is enhanced by a refined, persistent warmth and a soft smokiness, showcasing the depth and intensity developed over 23 years.

The Distillery

Caroni
Caroni Distillery, founded in 1918 on a single estate complete with its own sugar plant, crafted a heavy, rich golden rum prized enough to supply the British Navy. Despite the Caribbean’s long history of rum distilling, dating back to 17th-century sugar plantations, the collapse of Trinidad’s sugar cane industry led to Caroni’s closure in 2002 and subsequent demolition. Once there were around 50 distilleries in Trinidad and Tobago, yet none now carry Caroni’s legacy, making Caroni Rum increasingly rare and highly sought-after by both connoisseurs and collectors worldwide.
