Tasting Notes

TWB Tasting Notes: Nose: The initial aromas are intense and complex, with dominant notes of dark molasses, burnt sugar, and rich toffee. Secondary aromas include hints of charred oak, tobacco, and leather, complemented by subtle undertones of dried fruits such as figs, raisins, and prunes. There are aromatic spices including cloves, nutmeg, and a hint of black pepper. Other notes include slight medicinal hints, typical of Caroni's heavy rums, with a touch of smoky, rubbery nuances. Palate: The body is full-bodied and powerful, with a rich and oily texture. The primary flavors are robust, with strong flavors of dark chocolate, espresso, and treacle. Secondary flavors include layers of oak, with vanilla, caramel, and a pronounced smokiness. Fruity elements consist of dark fruits such as blackcurrants, dates, and a touch of overripe banana. The spice notes are bold, featuring cinnamon, allspice, and a touch of chili heat. Finish: The length is exceptionally long and warming. The final impressions include a lingering finish with echoes of smoky oak, dark chocolate, and a persistent note of black licorice and burnt caramel. The aftertaste is complex and evolving, with a slight bitterness balancing the sweetness and smokiness.

The Distillery

Caroni
Caroni Distillery, founded in 1918 on a single estate complete with its own sugar plant, crafted a heavy, rich golden rum prized enough to supply the British Navy. Despite the Caribbean’s long history of rum distilling, dating back to 17th-century sugar plantations, the collapse of Trinidad’s sugar cane industry led to Caroni’s closure in 2002 and subsequent demolition. Once there were around 50 distilleries in Trinidad and Tobago, yet none now carry Caroni’s legacy, making Caroni Rum increasingly rare and highly sought-after by both connoisseurs and collectors worldwide.
