Tasting Notes

Nose: Waves of crème brûlée, pineapple cube and orange blossom rise over polished oak, toasted coconut and a hint of nutmeg. Palate: Velvet layers of toffee fudge, banana flambé and vanilla cream coat the tongue, followed by cinnamon stick, almond brittle and a subtle roasted-oak warmth. Finish: Long, satin-smooth and gently drying—lingering honeyed grain biscuit, mellow oak spice and a final flourish of candied citrus.
Revisit Edinburgh’s silent grain giant with Caledonian 35 Year Old – 1987 Vintage, Signatory Cask Strength Collection. Distilled five years before the Caledonian Coffey stills fell silent for good, this single-grain Scotch spent three and a half decades in Hogshead #23484 before being bottled in July 2022 at natural cask strength for Signatory’s iconic decanter-style series. Un-chill-filtered and natural in colour, only 232 individually numbered bottles capture an opulent Lowland profile of silky vanilla, tropical fruit and polished oak—a final echo of the once-mighty “Cally.”

Caledonian
Founded in 1855 by Menzies, Bernard, and Craig, the historic Caledonian Distillery was a major player in Edinburgh's whisky industry, strategically located at the west end of Princess Street with its own expansive railway yard adjacent to the Edinburgh to Glasgow railway line. Renowned for producing high-demand grain whisky essential for the burgeoning whisky blending sector, Caledonian supplied pioneering figures like Andrew Usher, a key innovator in blended Scotch whisky. At its peak, the distillery was a massive enterprise contributing significantly to Scotland’s whisky heritage. Although it closed in 1988 and the site was subsequently redeveloped for housing and business use, the Caledonian Distillery remains a pivotal part of Edinburgh’s whisky history, reflecting the city's rich industrial past and enduring legacy in the global whisky market.
