Nose: Billows of kiln smoke and sea-spray collide with blackberry jam, rose-hip syrup and a drizzle of molasses, underpinned by cracked pepper and cocoa nibs. Palate: A bold surge of smouldering peat embers, liquorice root and briny toffee glides into layers of black-forest gateau, clove-spiked chocolate and candied citrus peel. Finish: Long, smouldering and gently dry—lingering camp-fire ash, port-soaked raisins and a final flourish of salted caramel.
