New tasting blog: We had another fantastic bottle through the door from our friends at Morrison & MacKay Independent bottling. This time it was a 1989 Macallan 25 year old single Malt. This is a lovely sweet and mellow dram from this long established and well renowned Scottish Speyside distillery. With only 288 bottles form the cask, this dram makes a fine addition to the Carn Mor collection and will certainly be one to add to the collection. Top dram. Tomatin 20 Year Old 1992 vintage Highland single malt Scotch whiskey. Single Oloroso Sherry Hogshead cask #31497 bottled November 2012. Limited release of 328 bottles.

Nose: Raisins, Muscovado sugar, coffee and Liquorice with hints of orange peel and sweet vanilla pods

Palate: Ripe plums, prunes, raisin’s and treacle toffee. Full bodied with a nice balance between sweet fruit and a spiciness that dances around the mouth.

Finish: Gentle and soft but with a dryness that fades slowly away.

Tomatin

Tomatin malt whisky distillery was established in 1897 and operated with two stills until 1956 after which there were frequent and numerous additions culminating in 23 stills in 1986 making Tomatin the largest distillery in Scotland at that time. However, eleven were subsequently closed and it is currently operating with twelve. Tomatin Distillery is a Scottish Highland distillery situated close to the Cairngorms National Park and sitting at an altitude of 315m it is the third highest distillery in Scotland. Great importance is placed on the quality of its casks and Tomatin Distillery is one of very few Scottish distilleries to continue to operate a cooperage and to employ a cooper on site. Visitors are welcomed at the Tomatin Distillery visitor centre where distillery tours are available.
