Annandale Distillery. Established in 1836 and closing in 1918, this lowland distillery reopened it's doors and sprung back into action in 2014 producing scotch whisky after a 90 year break. Traditional chimney stack and pagoda roof, tie in the history of the buildings with the impressive, modern redevelopment. The Washbacks and Stills share an open plan room. Clean, crisp and bright room is in contrast to many darker, dustier and settled distillery counterparts. The Mash Tun. Where the grain and the water meet and mingle. This is where heating this mixture produces the sugars from the broken down barley grain's starch. Paul John Edited Indian single malt whiskey. Peated single malt from Goa, India. Matured in ex-bourbon casks.

Nose: chocolate mint evolves from the delicate peats which sit beautifully with the lesser oaky theme; a comfortable, yet always complex, nose with the smoke soft and relaxed and refusing to bully the juicier barley;

Taste: grassy barley shows first, but then slowly gives way as those most gentle peat notes dissolve onto the palate and begins to build momentum and intensity. Again there is a chocolate mint/mocha theme, as well as a sublime mollassed note which injects all the sweetness required;

Finish: long, helped by to-die-for oils, some hints of spice and now some tannins, plus the vanilla. But all is beautifully weighted, patient and poised; Oh, and did I mention the chocolate mint…?
